Food for Thought


Last year, I spent the summer in Mexico and got to witness the way my sister-in-law (Erin) makes wonderful meals simply and cheaply! Sadly, I am a pretty horrible cook. I can ruin (and do) just about anything! At home, we don't cook real meals very often....but, after coming home from Mexico, I decided I was going to make dinner every night I could! It got frustrating because I am usually the only one home and don't want to go through the trouble of making something just for me. Plus, I was often working as a waitress and would just eat at work. This last week, I quit working at the restaurant because I needed to be home more and do a better job of making dinner, keeping the house, etc. (working 2 jobs, homework, and play practice become VERY time consuming!)So, it is time to renew my commitment and start cookin' again, even if I am dining alone! (I can always save some for when my mom gets home too!) Thankfully, I have been blessed with a big sister and and a sister-in-law who have given me some wonderful recipes! With this re-commitment, I am looking for even more yummy and EASY recipes for me to try! I want to get some experience before I have people TRULY counting on me for delicious food!
